In 2011, my husband was diagnosed with pre-diabetes, and I was having frequent episodes of post-meal hypoglycemia. With the blessing of our physician, we both started a moderately low-carb diet. 

Within six months, my husband’s blood sugar levels normalized, and my hypoglycemia episodes disappeared. We had tons of energy, felt clear-headed, and our teeth and gums were healthier than ever. There was no way back – we found our magic pill. 

Excited about our new way of eating, I started a blog documenting it and named it “Healthy Recipes Blog” because by then, I was convinced that our new way of eating was good for our health. 

After a few months, people began finding my recipes and responding to them. Over the years, I’ve received grateful emails and comments from many readers. One of my favorite emails captures why I love what I do. It says, “I love your recipes and look forward to trying more. For me, low-carb is a sacrifice. You are making it easier.

Another reader emailed me to say, “I recently had a birthday and didn’t think I’d be able to have a cake without “breaking the rules,” but your keto birthday cake was delicious. It turned out moist, flavorful, and didn’t taste good-considering-it’s-gluten-free. It was downright tasty with none of the high-carb flours and oodles of sugar found in other gluten-free recipes.”

And Jan told me in a comment, “I’m so glad I found your site. I have just been diagnosed with diabetes and have chosen a high-protein, low-carb diet. I can see myself cooking many of your recipes. Thank you so much. I had your stuffed poblano peppers for supper tonight, and they were amazing.”

Having a successful blog that generates income is wonderful. Knowing you help people is even better. The low-carb diet is restrictive, and many people advised by their physicians to follow it can’t stick to it. As a reader recently pointed out, “How can you tell a Cuban-born man never to eat rice and beans again?”

My goal is to show my readers they can be happy and satiated on the low-carb diet. To truly serve them, I must create all the recipes on my website and test, photograph, and film them. There are no shortcuts! AI-generated recipes, images, and videos won’t cut it. My readers trust my recipes because they know they were crafted, prepared, and tested by a fellow human who is walking the walk, eating a low-carb diet for many years now — and thriving.  

I hope to keep doing this for many more years, with AI helping and supporting creators like me rather than AI-generated content replacing us. Over the past thirteen years, I have helped thousands of people. I would love the opportunity and privilege to help a few thousand more!
